This delicious salad can be enjoyed as a light lunch, or a hearty dinner. Even when an anteater climbs a tree in front of Casa Mariposa in broad daylight, making you stop slicing avocados to watch every move he makes, the salad is still quick to prepare.
Ingredients:
1/4 cup extra virgin olive oil
juice of 1 lime
1/4 tsp cumin
salt
black pepper
cherry tomatoes, halved or 2 large tomatoes, cut in chunks
1/2 cup black beans (or red beans) drained and rinsed
1/2 cup corn
1/2 medium red onion, finely chopped
1 jalapeƱo, minced
2 ripe avocados, cubed, more if they are small avocadoes
2 TB cilantro, chopped
Directions
In a small bowl, make dressing. Whisk together olive oil, lime juice and cumin. Season with salt and pepper. Set aside.
In a large bowl, combine remaining ingredients.
Toss with dressing until well combine.
