Gallo Pinto is the traditional Costa Rican breakfast and every woman has her own secret recipe. This hearty and filling meal is called Spotted Rooster because of the dark beans with the white rice. Gallo Pinto has a long history and is important to Costa Rican identity and culture. Casa Mariposa treehouse may not be a typical place to visit, but you can still enjoy this traditional meal.
Ingredients:
Cooked rice, ½ cup per person
Beans, ½ cup person (use a can of red or black, or cooked beans)
cilantro
½ onion, chopped fine
1 red pepper, sliced finely
few cloves of garlic, chopped
salt & pepper to taste
optional:
1 egg per person
1 tortilla per person
1 plantain per person, peeled, sliced and fried
1/2 avocado per person, sliced
dijon mustard
Lizano sauce (only found in Costa Rica)
guacamole
Directions:
Cook veggies in large pan 5-8 minutes until brown and tender
Add rice & beans
Add mustard and Lizano sauce
Stir all together for 2 more minutes
Add garlic, salt & pepper to taste
Serve with one fried egg per person, a tortilla and/or fried plantains
Can serve with dijon mustard
Before serving, top with sliced avocado or guacamole if desired
