I'm not usually a fan of cole slaw, BUT this isn't like the slaw that goes with bbq that you may be thinking of!
The best thing about this is as long as you have cabbage you can use whatever else you want with it. For the one pictured this is what I used:
Cabbage, carrot, red onion, apple, jalapeño, cilantro, vinegar, ginger infused simple syrup that i made earlier, salt and pepper, and a tiny bit of sour cream (natilla here in CR)
You could even make this with just cabbage. It's really easy to substitute or discard any ingredients you don't like or don't have.
I typically don't measure, just taste as you go and add more of what you like.
I would have preferred to use lime juice, but i didn't have any so that is why we used the vinegar/ginger syrup as a replacement.
Just cut everything up fairly thin and mix together!
If you like it creamier, just add more natilla, if you don't have any don't worry, it's still delicious without!
You can eat it with pretty much anything like tacos, quesadillas, even eggs. Buen provecho!
