I’m not a huge fan of rice, so when My Man cooks 4 cups of rice in Casa Mariposa, what do we do with the 3 cups that are leftover? This nutritious and delicious salad is a tasty option.
ingredients: serves 2 people
juice of 2 limes
salt and pepper
1/4 cup olive oil
1 tsp mustard (optional)
3 cups cooked rice, cooled
optional ingredients (use the ones you like or ingredients that you have on hand)
1/2 cup cucumber, diced
1/3 cup tomatoes, diced
1/4 cup green or red onion, sliced
3 TB parsley, chopped
1 TB basil leaves, shredded
2 celery stalks, finely chopped
1/2 red pepper, chopped
1/2 cup of cherry tomatoes or 1/2 chopped tomato
1/3 cup slivered almonds
1/2 cup grated mozzarella
serve with Lizano sauce ( you are in Costa Rica after all)
directions:
combine rice, onion, almonds and veggies in bowl
place olive oil, lime juice, herbs and spices in a jar with secure lid. Shake to combine.
Pour oil mixture over rice mixture. Toss.
