After a day of hiking, kids and adults in Casa Mariposa treehouse enjoy this tasty dish, which is easy to turn into a vegetarian option by substituting tofu for the chicken.
3/4 cup fresh pineapple chunks (reserve juice)
2 TB soy sauce
2 TB vinegar
2 cloves garlic, chopped fine
1 TB grated fresh ginger
2 green onions, chopped fine
1 lb boneless, skinless chicken
1/4 cup corn starch
3 TB oil
2 cups veggies such as green pepper, broccoli, peas
serve with cooked rice
1. In a medium-sized bowl, combine onions, ginger and garlic with pineapple including juice, soy sauce, vinegar and 2 TB water. Set aside.
2. Cut chicken into bite-sized pieces. Toss with the corn starch.
3. Cook chicken in oil, stir-fry until cooked.
4. Stir in the vegetables and pineapple mixture. Cook for 2 minutes.
5. Serve over rice.
