Pizza is often our “last meal” in Casa Mariposa because it’s a wonderful way to use all of your leftovers. Our guests are usually surprised and delighted when we tell them that we’re going to serve pizza in the treehouse, so I leave out the part that I have no clue what else to do with the leftovers. We use almost anything that hasn’t been finished and have enjoyed local ingredients like cashews and zucchini.
Ingredients:
1-2 tortillas per person, corn or flour, any size
Tomato sauce (in Costa Rica grocery stores, tomato sauce is found in squeezable pouches)
Toppings:
Fresh tomatoes, thinly sliced
Fresh pineapple, thinly sliced
Onion, sliced
Red, orange or green pepper, diced
Mushrooms, sliced
Olives
Zucchini, grilled or fresh
Broccoli, chopped
Spinach (we use the leafs not the stems)
Kale
Jalapeno or chili peppers, diced fine
Cashews or almonds
Pepperoni, ham, sausage, cooked chicken or turkey, if you have a fridge, or a cooler with ice
Grated or sliced cheese if you have a fridge, or a cooler with ice
Fresh basil or oregano or thyme
1. Lay tortillas on baking sheets.
2. Spread tomato sauce evenly over all the tortillas.
3. Add any of the above toppings.
4. Sprinkle basil, oregano or thyme.
5. Top with cheese.
6. Bake at 400F (200C) for about 15 minutes. If you put the pizzas into the oven at 4:45 pm, you can enjoy the firefly show from a rocking chair on the deck while the pizzas are cooking.
