Watermelons are inexpensive and very easy to find in Costa Rica. They are also juicier and more flavourful than the ones found in Canada and US. A family was staying with us in Casa Mariposa which meant that there were 6 people at every meal, and this recipe was easy to adjust from feeding a couple to a crowd. Our friends brought cheese which we added to this salad.
This delicious and refreshing salad is perfect after a morning dip in one of the river’s swimming holes.
Watermelon Salad
1/4 cup lime juice
1 medium red onion, thinly sliced
1 watermelon, cubed
2 cucumbers, peeled and cubed
1/2 cup chopped fresh cilantro - if you’re not a fan of cilantro, use parsley or basil instead
black pepper
salt
8 oz feta cheese, crumbled - optional (found in Uvita and Cuidad Neilly)
Directions:
In a small bowl, pour lime juice over red onions. Allow to marinate while assembling the salad. Gently combine the watermelon, cucumber, cilantro and cheese in a large bowl.
Season with black pepper.
Toss watermelon salad with marinated onions.
Season with salt just before serving.
